Brasserie Les Saveurs, St. Regis Singapore

Classic dining restaurant Les Saveurs at top-draw luxury haven the St. Regis Singapore is refashioning its menu, with new epicurean adventures awaiting diners. As always, Les Saveurs maintains its affection for modern French cuisine, as seen through both local and contemporary lenses.

Executive Chef Frederic Colin and Brasserie Les Saveurs Chef de Cuisine Jean-Marie Merret have created a range of new menu items for the discerning palate.

WardrobeTendsFashion.com experienced a sampling menu that included the following: Lobster salad with ratatouille and mache, bisque vinaigrette (starter, SGD33); escargot ‘vol au vent’ garlic and parsley butter, coriander and lemon grass (SGD25); and roasted lamb saddle with pesto, ‘Paimpol’ white bean with ginger and lamb jus (SGD48).

The lamb saddle and the escargot are particularly noteworthy and memorable, for being disarmingly comfortable yet meticulous in both flavor and presentation. We also tried the slowly cooked low-temperature organic salmon, asparagus and girolls mushroom with dry mushroom sabayon but this is not on the menu yet.

Besides these new items, the seafood platter (SGD168) pictured here has also been enhanced but remember that this depends on seasonal availability.
