Champagne Devaux Debuts At The White Rabbit

We were recently invited over for lunch at the refined ‘The White Rabbit’ restaurant and bar, to sample some champagne and food. What was the occasion? The classic European chic restaurant recently debuted Champagne Devaux adding the brand to its already impressive 120 label-strong wine programme. Paired with a select tasting menu specially prepared by The White Rabbit, we had the opportunity to get our first taste of the Devaux Grande Reserve NV and the Devaux Cuvee D.

The Devaux Grande Reserve NV, is composed of 70 percent Pinot Noir and 30 percent Chardonnay, both from the Cete des Bar region in France. Exhibiting a gold yellow hue, the Grande Reserve NV tickles your olfactory sense with floral notes accompanied by hints of peach and apricot. Taste wise, it exudes a fine, intense and complex palate with a touch of plum.

Halfway through the three course meal, we were introduced to the round and robust, Devaux Cuvee D. Made from 60 percent Pinot Noir and 40 percent Chardonnay, it is reminiscent of candied orange peel with notes of butter and spices. The Cuvee D should be lauded for its fresh, creamy and long finish thanks to the elegance of Chardonnay combining with the robust roundness of Pinot Noir. Like the Grande Reserve NV, the Cuvee D only contains juice from a single pressing, thus allowing for a purer experience.
