Inspired by the ‘sweet’ and ‘smoky’ characters of Highland Park single malt, MO Bar’s new Head Bartender, Jigmee Lama has conceived four delicious cocktails for the festive season with the new Highland Park Chamber. Enjoy Jigmee’s ‘Magic of Christmas’ with ‘Mango-all-the-way” in a ‘sMOky’ road through ‘A trip to Kirkwall’.
With his skills and experience tapped from legends, Jigmee is creating a menu using single malt whisky to offer MO Bar fans his unique angle on a product very much in vogue in Hong Kong. Jigmee believes the sweetness created by Sherry seasoned casks used for maturing Highland Park Dark Origins will bring out a truly memorable expression in his signature cocktail. Throughout the festive months, Jigmee will also create a cocktail menu with the Highland Park Chamber, which will infuse cocktails with more powerful smoke flavour, instilling the Orkadian ‘peat reek’ to his master serves.
Highland Park is the most northern distillery of Scotland. Lying at 58°59’ in the township of Kirkwall, and under the dual influences of the cold front from the North Sea coupled with the warm sea current from the Gulf of Mexico which creates gusty winds blowing yet with a very ‘constant’ temperature range in the Orkney Isles. The single malt whisky from Highland Park is the result of such a rough environment.
